Peach & Brown Sugar Muffins
- 1 cup fresh peaches
- 4 cups flour
- ⅔ cup brown sugar
- 2 Tbsp. baking powder
- 1 tsp. salt
- ½ tsp. baking soda
- ¼ tsp. allspice
- 2 eggs
- 2 cups sour cream
- ½ cup vegetable oil
- Preheat oven to 400 degrees.
- Peel, pit and slice peaches; set aside.
- In large mixing bowl, stir together the flour, brown sugar, baking powder, salt, soda and allspice. Make a well in the center.
- Combine the eggs, sour cream, and oil; stir in peaches.
- Add peach mixture all at once to the flour mixture. Stir just until moistened; batter should be lumpy.
- Spoon batter into greased or paper-lined muffin tins, filling each about ⅔ full.
- Bake for 20-25 minutes or until golden brown.
