Heat oven to 350 degrees. Mix butter, 1 cup flour and 1 TBL. sugar. Press into ungreased baking pan, 9x9x2 inches. Bake 10 minutes and remove from oven.
Mix egg yolks, 1 cup sugar, 2 Tbsp. flour, salt and half & half. Stir in Rhubarb.
Pour over baked crust. Bake about 45 minutes.
Beat egg whites until foamy. Beat in ⅓ cup sugar, 1 tablespoon at a time. Continue beating until stiff and fluffy.
Spread over rhubarb mixture and bake until light brown, about 10 minutes.
