Rhubarb Windsor
- Topping
- 1 cup flour
- 1 cup sugar
- 1 tsp. baking powder
- a pinch of salt
- ½ cup butter, softened
- 1 large egg
- Filling
- 4 cups Rhubarb
- ¼ cup sugar
- 1 tsp. cinnamon
- Mix all topping ingredients together, except egg. Then add unbeaten egg.
- Place chopped rhubarb in 9x9 inch pan. Sprinkle sugar and cinnamon over rhubarb.
- Crumble topping over rhubarb.
- Bake for 35-40 minutes at 350 degrees.
