Kohlrabi Holiday Slaw
- 3 medium beets, cooked and peeled
- 2 medium carrots, peeled
- 2 medium kohlrabi, peeled
- Dried cranberries
- Walnuts, chopped
- Dressing
- ⅓ c. sour cream
- ½ c. mayonnaise
- 1 c. buttermilk
- 1 Tbsp. white vinegar
- ½ tsp. dill
- 2 Tbsp. parsley
- 1 tsp. each salt and pepper
- 3 Tbsp. chives
- 1 Tbsp. crushed garlic – about 5 cloves
- Shred vegetables.
- Mix all ingredients for dressing until well blended. Pour over vegetables and combine.
- Add cranberries and walnuts before serving.
Note: the dressing makes a lot, so either halve the dressing quantities or increase vegetables.
