Cherry Pudding

Cherry Pudding
  • 1 cup flour
  • 1 cup + ½ cup sugar
  • ½ tsp. salt
  • 1 tsp. baking powder
  • ½ cup milk
  • 3 Tbsp. butter
  • 1 qt. pitted sweet cherries
  • ¼ tsp. cinnamon
  • splash of almond extract
  1. Mix flour, sugar, salt and baking powder.  Add milk and blend well.   Melt the butter in a 2 or 3 quart baking dish.
  2. Pour the batter on top of the melted butter. Heat the cherries in saucepan with ½ cup sugar; add the cinnamon and almond extract and remove from heat and pour over the batter mixture.
  3. Bake about 35 minutes at 350°. You can also use blueberries, peaches or other tart fruit with the same recipe.
