Quick Peach Cobbler

- 3 cups diced fresh peaches (sweetened to taste)
- 1 Tbsp. lemon juice
- 1 cup flour
- 1 cup sugar
- ½ tsp. salt
- 1 egg, beaten
- 6 Tbsp. melted butter
- Peel, pit and dice peaches. Sweeten to taste.
- Place in a deep baking dish. Sprinkle with lemon juice.
- Sift dry ingredients together, then add egg. Mix with fork until crumbly.
- Sprinkle evenly over peaches.
- Pour the melted butter over crumb mixture.
- Bake at 375° for 35 to 45 min.
