Garlic Scape Pesto

- 1 pound Garlic Scapes
- 1¼ cup Parmesan Cheese, grated
- 1 cup olive oil
- 1 Tbsp. lemon juice
- Ground pepper to taste
- Prepare garlic scapes by cutting off the blossom end (the swollen, pointed end) and cutting them into 2 inch length pieces.
- Put all ingredients in a food processor and blend until smooth.
- Use over pasta, on a crostini, or fish dishes.
To improve the nutritional value of the garlic scape pesto, throw in a handful of roasted pine nuts or almonds when blending.
