Garlic Scape Pesto

Garlic Scape Pesto
  • 1 pound Garlic Scapes
  • 1¼ cup Parmesan Cheese, grated
  • 1 cup olive oil
  • 1 Tbsp. lemon juice
  • Ground pepper to taste
  1. Prepare garlic scapes by cutting off the blossom end (the swollen, pointed end) and cutting them into 2 inch length pieces.
  2. Put all ingredients in a food processor and blend until smooth.
  3. Use over pasta, on a crostini, or fish dishes.
To improve the nutritional value of the garlic scape pesto, throw in a handful of roasted pine nuts or almonds when blending.
