Apple Gingerbread Cobbler

Ingredients
- 4 cups peeled, chopped apples
- 1 tbl. Lemon juice
- ¼ cup sugar
- 1 egg
- ¼ tsp. Salt
- ½ cup buttermilk
- ¼ cup molasses
- ½ cup brown sugar
- 2 tbl. vegetable oil
- 1 cup flour
- ¼ tsp. cinnamon
- ½ tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. ginger
- ½ tsp. cinnamon
- ¼ tsp. nutmeg
- 1 tsp. cornstarch
Instructions
- Combine apples, brown sugar, 1 cup water, lemon juice and cinnamon in saucepan. Cover and cook ‘til apples are tender.
- Beat together sugar, egg, salt, buttermilk, molasses and oil.
- Stir together dry ingredients and spices. Add to egg mixture and beat ‘til smooth.
- Combine cornstarch and 1 Tbsp. water; stir into apple mixture.
- Pour apple mixture into 1 ½ quart casserole. Pour gingerbread batter over top.
- Bake 350 degrees for 30 min.
