Apple Gingerbread Cobbler

Ingredients
  • 4 cups peeled, chopped apples
  • 1 tbl. Lemon juice
  • ¼ cup sugar
  • 1 egg
  • ¼ tsp. Salt
  • ½ cup buttermilk
  • ¼ cup molasses
  • ½ cup brown sugar
  • 2 tbl. vegetable oil
  • 1 cup flour
  • ¼ tsp. cinnamon
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. ginger
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 1 tsp. cornstarch
Instructions
  1. Combine apples, brown sugar, 1 cup water, lemon juice and cinnamon in saucepan. Cover and cook ‘til apples are tender.
  2. Beat together sugar, egg, salt, buttermilk, molasses and oil.
  3. Stir together dry ingredients and spices. Add to egg mixture and beat ‘til smooth.
  4. Combine cornstarch and 1 Tbsp. water; stir into apple mixture.
  5. Pour apple mixture into 1 ½ quart casserole. Pour gingerbread batter over top.
  6. Bake 350 degrees for 30 min.
