Blackberry Pie
  • 3 pints blackberries
  • 1 ¼ cup sugar
  • ⅛tsp. kosher salt
  • ¾ tsp. ginger
  • ¼ cup flour, tapioca flour or cornstarch for thickener
  • 2-3 Tbsp. butter
  • Pastry for double crust pie
  1. Preheat oven to 400°. Mix blackberries with sugar, salt, ginger and thickener. Let stand for 15 minutes. Place into crust, dot with butter. Cover with top layer of crust sliced with heat vents.
  2. Turn oven down to 350° and bake for approximately 1 hour. Place foil over the top if the top starts to brown too quickly.
