Peach & Brown Sugar Muffins

  • 1 cup fresh peaches
  • 4 cups flour
  • ⅔ cup brown sugar
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • ½ tsp. baking soda
  • ¼ tsp. allspice
  • 2 eggs
  • 2 cups sour cream
  • ½ cup vegetable oil
Instructions
  1. Preheat oven to 400 degrees.
  2. Peel, pit and slice peaches; set aside.
  3. In large mixing bowl, stir together the flour, brown sugar, baking powder, salt, soda and allspice. Make a well in the center.
  4. Combine the eggs, sour cream, and oil; stir in peaches.
  5. Add peach mixture all at once to the flour mixture. Stir just until moistened; batter should be lumpy.
  6. Spoon batter into greased or paper-lined muffin tins, filling each about ⅔ full.
  7. Bake for 20-25 minutes or until golden brown.
