Blueberry Muffins (or Raspberry)
Ingredients
- 1 ¾ cup flour
- 2 ½ tsp. baking powder
- 1 tsp. salt
- ½ cup sugar
- 2 dashes of cinnamon
- 1 egg
- ⅔ cup milk
- ¼ cup vegetable oil or melted butter
- 1 cup fresh or frozen blueberries (or raspberries)
Instructions
- Heat oven to 400°. Grease 12, 2 ½-inch muffin pan cups. Sift flour, baking powder, salt, sugar and cinnamon into bowl. Make well in center. Add egg, milk and oil/butter. Stir just enough to moisten dry ingredients. Fold in blueberries. Bake 20 to 25 min. until golden brown.
