Blueberry Muffins (or Raspberry)
 
Ingredients
  • 1 ¾ cup flour
  • 2 ½ tsp. baking powder
  • 1 tsp. salt
  • ½ cup sugar
  • 2 dashes of cinnamon
  • 1 egg
  • ⅔ cup milk
  • ¼ cup vegetable oil or melted butter
  • 1 cup fresh or frozen blueberries (or raspberries)
Instructions
  1. Heat oven to 400°. Grease 12, 2 ½-inch muffin pan cups. Sift flour, baking powder, salt, sugar and cinnamon into bowl. Make well in center. Add egg, milk and oil/butter. Stir just enough to moisten dry ingredients. Fold in blueberries. Bake 20 to 25 min. until golden brown.
