Pear and Berry Crisp
  • 3 lbs. (5 to 7) ripe pears
  • 2 Tbsp. flour
  • 1 Tbsp. fresh lemon juice
  • 12 oz. frozen mixed berries
  • 3 Tbsp. sugar
  • Oatmeal Topping:
  • ¼ cup flour
  • 2 Tbsp. sugar
  • ½ cup rolled oats
  • ¼ cup light brown sugar
  • ¼ tsp. allspice
  • 4 Tbsp. cold unsalted butter
  1. Preheat oven to 400°.
  2. Peel pears and cut into ¾ inch pieces. Spread frozen berries in a single layer on a paper towel lined baking sheet; thaw 30 min. at room temp.
  3. Meanwhile, make Oatmeal Topping: in a large bowl, mix together flour, brown sugar, sugar, allspice and a pinch of salt. Stir in oats. Using a pastry blender, two knives, or your fingers, to incorporate butter (cut into small pieces) into flour mixture until large, moist clumps form. In a large bowl, combine pears with lemon juice, thawed berries, sugar and flour; toss well.
  4. Transfer to a shallow 2-quart baking dish. Sprinkle evenly with chilled topping. Bake until fruit is tender and topping is golden, about 45 minutes. Cool at least 20 minutes before cutting.
