Ingredients
Blackberry-Basil Vinaigrette
- ½ c (heaping) blackberry jam or jelly (or any flavor to your liking)
- ¼ c red wine vinegar
- 6 fresh basil leaves (or more to your liking)
- 1 garlic clove sliced
- ½ t salt
- ½ t pepper
- ¾ c vegetable oil
Salad
- 8 c salad greens
- 1 ½ c mango or pear, sliced
- 1 ½ c pink grapefruit sections or a can of mandarin oranges drained
- 1 ½ c fresh strawberries, sliced
- 1 c fresh blackberries
- 1 large avocado, peeled and sliced
Instructions
- Pulse first 6 vinaigrette ingredients in a blender 2-3 times until blended. With blender running, pour oil through food chute in a slow steady stream. Process until smooth.
- Toss salad ingredients
- Pour dressing mixture over salad mixture before serving.
