Ingredients
Blackberry-Basil Vinaigrette
  • ½ c (heaping) blackberry jam or jelly (or any flavor to your liking)
  • ¼ c red wine vinegar
  • 6 fresh basil leaves (or more to your liking)
  • 1 garlic clove sliced
  • ½ t salt
  • ½ t pepper
  • ¾ c vegetable oil
Salad
  • 8 c salad greens
  • 1 ½ c mango or pear, sliced
  • 1 ½ c pink grapefruit sections or a can of mandarin oranges drained
  • 1 ½ c fresh strawberries, sliced
  • 1 c fresh blackberries
  • 1 large avocado, peeled and sliced
Instructions
  1. Pulse first 6 vinaigrette ingredients in a blender 2-3 times until blended. With blender running, pour oil through food chute in a slow steady stream. Process until smooth.
  2. Toss salad ingredients
  3. Pour dressing mixture over salad mixture before serving.
