Rhubarb Bread

Ingredients
  • 1 ½ cups brown sugar
  • ⅓ cup salad oil
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup sour cream
  • 1 tsp. baking soda
  • 2 ½ cups flour
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 1 ½ cups diced rhubarb
  • ½ cup chopped nuts
  • ½ cup golden raisins
  • ½ cup sugar
  • 1 tsp. butter
Instructions
  1. Combine first four ingredients in large mixing bowl.
  2. Mix together sour cream and baking soda and set aside.
  3. Mix flour, cinnamon and nutmeg; set aside.
  4. Add flour and sour cream mixtures alternately until well blended. Add rhubarb, nuts and raisins.
  5. Pour into two greased loaf pans and top with a crumbled mixture of sugar and butter.
  6. Bake at 350 degrees for about one hour.
