Rhubarb Bread

Ingredients
- 1 ½ cups brown sugar
- ⅓ cup salad oil
- 1 egg
- 1 tsp. vanilla
- 1 cup sour cream
- 1 tsp. baking soda
- 2 ½ cups flour
- ½ tsp. cinnamon
- ¼ tsp. nutmeg
- 1 ½ cups diced rhubarb
- ½ cup chopped nuts
- ½ cup golden raisins
- ½ cup sugar
- 1 tsp. butter
Instructions
- Combine first four ingredients in large mixing bowl.
- Mix together sour cream and baking soda and set aside.
- Mix flour, cinnamon and nutmeg; set aside.
- Add flour and sour cream mixtures alternately until well blended. Add rhubarb, nuts and raisins.
- Pour into two greased loaf pans and top with a crumbled mixture of sugar and butter.
- Bake at 350 degrees for about one hour.
