Rhubarb Windsor

  • Topping
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp. baking powder
  • a pinch of salt
  • ½ cup butter, softened
  • 1 large egg
  • Filling
  • 4 cups Rhubarb
  • ¼ cup sugar
  • 1 tsp. cinnamon
Instructions
  1. Mix all topping ingredients together, except egg. Then add unbeaten egg.
  2. Place chopped rhubarb in 9x9 inch pan. Sprinkle sugar and cinnamon over rhubarb.
  3. Crumble topping over rhubarb.
  4. Bake for 35-40 minutes at 350 degrees.
