Marinated Asparagus

Marinated Asparagus
  • 1 lb. fresh asparagus
  • 3 Tbsp. vinegar – I use cider vinegar
  • ¼ cup veg. or olive oil
  • ½ tsp. salt
  • ¼ tsp. ground pepper (or ground white pepper)
  • 1 Tbsp. fresh parsley
  • 1 clove crushed garlic
  • ½ tsp. sugar
  1. Cook asparagus until tender crisp and drain well. Mix together all other ingredients until well blended. Pour onto asparagus and place into sealed container and refrigerate at least six hours or overnight.
You can also add ⅛ - ¼ tsp basil and/or oregano to add more flavor.
Serve over your favorite lettuce with sliced tomatoes.
Also great for a finger food snack.
